We all know people in our lives who are experiencing the many faces of hardship. Illness, separation, financial difficulties, terminal illness, loss of a loved one...so many difficulties we face. Just today I was talking with a friend who is going through some rough family health issues. She and her husband own their business which makes this crisis all-the-more difficult. Sweet Summertime and we are enjoying fruits and vegetables at their peak flavors as markets are overflowing with the bounty of Summer. You'll see the many fruit pies we offer from peach to berry in many varieties. New to our collection is the Tomato Pie which captures that "just picked" flavor in a savory Parmesan crust. Just Peachy
Saturday at sunset I took a drive across the river to Eckerts in Belleville, IL to pick up some "just picked." It was a beautiful evening and I forced myself to stay on task and not linger too long. We've had a good amount of rain so the fields of corn are lush and better yet the peach crop abundant. The warm breeze was delightful as I drove back, windows down, with the car full of peaches. Popping up through the blanket of snow outside my front door I can see the crocus and daffodils, there are robins all around, and the sun is out a bit longer every day.
